Regulating Enzymatic Antioxidants, Biochemical and Physiological Properties of Tomato under Cold Stress: A Crucial Role of Ethylene

The production of tomato under low-temperature stress in the open fields is a challenge faced by many farmers. current study compares use different ethylene treatments to accelerate fruit ripening during two successive seasons cold stress. included foliar application ethrel (2500, 5000, and 7500 ppm) field at mature green stage, dipping collected fruits solution (1000, 1500, 2000 right after harvest, gaseous (100, 200, 300 harvested fruits. effects were compared untreated (control). Characteristics, such as physical properties (ripening, weight loss, firmness, decay, color), chemical (ascorbic acid, acidity, total soluble sugars, pigments), enzymatic activities (polygalacturonase pectin methylesterase), sampled throughout storage period. In general, gas was most effective method accelerating process other methods applied. highest vitamin C solid contents redness parameters found applying dose (300 ppm). This indicates that fruits, which are cultivated conditions early summer season Mediterranean climate, might be stage exposed application.
